In the high hills of Uttarakhand, Foxtail Millet is grown on carved mountain terraces following traditional polyculture systems (*Baranaja*). The crop relies purely on monsoon rains and mineral snowmelt without canal irrigation or chemical inputs.
The grain heads absorb intense mountain sunshine and overnight mountain dew, developing strong seed coats rich in polyphenols and prebiotic fibers. Harvesting is done by hand with curved sickles, followed by open-air sun curing on clean slate threshing floors.
